For this fall release, represented by the golden stallion, the high-rye content calls to mind the crisp fall air, while the use of white corn conjures visions of autumnal fields—and the spirit’s deep amber coloring recalls the red and gold leaves of the season.
Mashbill:
70% White Corn, 25% Rye, 5% Malted Barley

Dad’s Hat, a Pennsylvania based rye whiskey distillery are attempting to revive the reputation of Pennsylvania Rye by creating a small batch whiskey with a focus on quality and flavour.
Our release is a 6 Year Old bottled at natural cask strength, and we’’ve filled just 289 bottles.
Rye whiskey was previously the whiskey of choice in the US, with Pennsylvania’s distillers making millions of gallons a year.
During prohibition, bootleggers created poorly made substitutes for Pennsylvania Rye, which was very damaging to its reputation. After prohibition passed it unfortunately never quite recovered, with people turning to Bourbon instead.
The distillery, founded in 2011, creates an ‘old-school’ Pennsylvania style Rye – 80% grain, 20% malt (15% barley, 5% rye malt), no corn, and a sweet mash recipe. They use local farms for their grains, temperature controlled fermenters, doing a five-seven day low and slow ferments to develop a complex flavour.
NOSE
Rye bread and allspice, but then very fruity! Dried fruit; cranberries, apricots, and chocolate covered raisins. The spices return with a hint of mint, and some wood char.
TASTE
Silky mouthfeel. Fruity and spicy with sour cherries, and cranberries. Woody spices; clove, a hint of cinnamon, and charred oak. A medium length finish that’s full of chocolate.
The first of two new bottlings from the multi award-winning, small batch whiskey distillery nestled in the foothills of the Rocky Mountains, Distillery 291.
Our Batch 2, is a 3 Year Old single cask Rye Whiskey, using 100% Colorado Rye. We’ve bottled it at natural cask strength 66.6% abv, and have filled just 294 bottles
With a nod to tradition, the mash is soured in open air fermenters before it is distilled three times in locally-made pot stills. Myers built his original still from copper photogravure plates that he had once used.
The whiskey is aged in virgin, heavy charred, American white oak barrels and is then brought to a finish using toasted aspen staves, which are harvested from a friend’s nearby land.
These two releases are an exercise in whisky geekery, and had we not gotten our hands on them would have been released as one of their ‘E’ Series releases. (E for experimental)
NOSE
Spicy, herbal, and a little bit agricultural. .Big rye bread dough notes, malty, Jamaican ginger cake, coffee candy. Hints of fennel and anise.
TASTE
Warming spices lead to sweet coffee, toasted rye bread, roasted grains and peppercorns. There’s a hint of chilli chocolate in the finish too. Seriously love this!

A silky, sumptuous, high-end cognac crafted using prestigious eaux de vie from Grande and Petite Champagne Crus. B&D XO is slowly matured in French oak barrels for a minimum of 10 years.
Nose:
This refined Cognac offers a bouquet of aromas focused on a core of woody and smoky notes of tobacco and cocoa as well as fruity notes of candied fruit and prune.
Taste:
X.O is incredibly rich, full-bodied and stunningly smooth. The initial notes explored on the nose are enriched with aromatic hints of plum, mocha, cedar wood and liquorice.

Barrel #245
The exclusive bourbon inside this bottle has been pulled from a single barrel, and hand-selected for its impeccable quality and flavour profile. The result is a masterpiece of uniquely dark and complex flavours, intermingled with surprisingly bright notes and the exuberant spice of rye.
Shane’s Notes:
Nose: Caramel apple, creme brulee, burnt orange, and banana pudding
Palate: Caramel driven off the start with a touch of vanilla bean. Buttery, creamy texture that’s followed up by a smash of rye spice and cinnamon. Dark chocolate, berries, and waves of oak follow.
Finish: Oak, tobacco, and orange zest linger on the palate.
A Two Brewers Classic, juxtaposing humble grains and noble oak, worthy of considered contemplation. A harmonious tandem, enrobed in delicious complexities.
Simple in nature, if not in construction, this bottling showcases all that barley and oak have to offer, coaxed out day by day and year by year. Indulgent and inviting, an expression charged with crème caramel and custard, made more interesting by the intricacies that surround.
